One installation artist I found is Ernesto Neto. Like the packaging tape installation, many of his installations are interactive and can be touched, manipulated, or walked on by visitors. I couldn't find an official website but here's his exhibit at MoMa and links to other installations.
Thanks Kate, I'm a big fan of Neto and was fortunate enough to see some of his work in Berlin a few years back. They are fascinating to walk through, referencing internal organs or maybe a weird planetary landscape. He does invite people to interact with the work itself, like the idea posed for our show about the mini city, we could really run with this kind of approach and get the viewer as involved as we can.
